Ingredients

  • A fistful of mint leaves
  • Fistful of corainder leaves
  • 1 star anise
  • 4 garlic cloves
  • 1 inch ginger
  • 2 chillies
  • 1 1/4 onion with 1 whole sliced
  • 2 tbsp grated coconut
  • 5 cloves
  • 1/2 inch cinnamon
  • 1/2 tsp pepper
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 chopped tomato
  • ½ cubed potato
  • ½ cubed capsicum
  • ½ chopped carrot
  • 2 tbsp peas
  • 5 chopped beans
  • 2 cup water
  • 1 tsp salt
  • 1 cup basmati rice which has been soaked for a while

Instructions

Step 1
First, put the mint and coriander leaves in a small blender and then also add 3 garlic cloves, the ginger, chillies, 1/4 onion, coconut, star anise, 2 pods cardamom, cloves, cinnamon and pepper.
Step 2
Now blend them into a smooth paste and add water accordingly.
Step 3
Now take a pressure cooker and heat ghee in it. Saute the cumin seeds and bay leaf until it becomes aromatic.
Step 4
Now add the sliced onion and salt and saute.
Step 5
Next, add the tomato and saute it until it softens and becomes mushy.
Step 6
Add the potato, capsicum, carrot, peas and beans and saute till it becomes aromatic.
Step 7
Now add what was in the blender and saute.
Step 8
Next, you add 2 cups of water and a little salt and then the rice and mix well.
Step 9
Pressure cook for 2-3 whistles.
Step 10
Once cooked, serve with raita.
