Have you always eaten pumpkin in the form of kaddu ki sabzi? We know the struggle! 

Let us tell you that Pumpkin (or Kaddu) is an immensely nutritious vegetable. It is also known for having amazing antioxidant properties which makes it an immunity-boosting food. But in most Indian households, we only get savoury form of pumpkin sabzi. Boring, right? 

Don’t worry! Because today, we are going to tweak that boring kaddu into something exotic and super delicious!

The flavour of Pumpkin is more on the sweeter side so it can make a great addition to the desserts. Now, desserts like pumpkin pie, cake cookies, or muffins might interest you a lot, but in this article, we have got some simple yet delectable Indian dessert recipes that will leave you asking for more!

Pumpkin Halwa

If you are craving a sweet treat, then this is the cue to try this Pumpkin Halwa. This halwa is light, indulgent yet a bit healthier as pumpkin is essentially a low-calorie food. 

Made with pressure-cooked pumpkin and cooked with sugar, cashews, pistachios, and cardamom powder makes for a yummy halwa, which will take you straight to the foodie heaven. 

Ingredients

  • 1/2 kg Pumpkin
  • 1/2 cup of sugar
  • 3 tablespoons of ghee 
  • 1/4 teaspoon of cardamom powder
  • 7-8 cashews
  • 5-6 pistachios (sliced)
  • 3 tablespoons of milk 

Instructions

  • First, start by peeling and chopping the pumpkin into small cubes. Remember, the smaller the better.
  • Then, add the pumpkin cubes to a pressure cooker.
  • Cover the lid and cook it for 4-5 whistles.
  • Once the pressure settles down, open the lid and check if the pumpkin pieces have softened or not.
  • If they are not of the mashable consistency. Then, add some water and cook them again.
  • Next, take a pan and heat 3 tablespoons of ghee in it.
  • Once, the ghee is hot, add the cashews and pistachios. Fry them till they get golden and caramelized. Keep the nuts aside.
  • Now, in the same pan, add the pumpkin that we cooked earlier and stir it for 5-6 minutes. Make sure that its raw smell disappears.
  • Then, pour 3 tablespoons of milk (preferably, full cream milk) followed by cardamom powder.
  • Stir it continuously and cook until the milk is absorbed.
  • After that, add 1/2 cup of sugar in parts while keep stirring.
  • As the sugar melts, the pumpkin halwa will start to thicken. You should note that the consistency of the halwa should be pudding-like.
  • Add fried cashews and pistachios. You can also add melon seeds, it’s totally up to you. Cook for another 1-2 minutes.
  • Garnish it with nuts and serve your pumpkin halwa hot!

Pumpkin Kheer

You are in for a real treat with this pumpkin kheer recipe! 

This unique and easy dessert is made using pumpkin, milk, sugar, ghee, and cardamom powder. Not only you can serve this delicious kheer at kitty parties and buffets but also to your kids. They are going to love it!

Ingredients

  • 2 cups of chopped pumpkin (1-inch pieces)
  • 3 cups of milk (full-cream milk or almond milk)
  • 3-4 tablespoons of sugar 
  • 1 teaspoon of ghee 
  • 1/2 teaspoon of cardamom powder
  • 7-8 almonds (sliced)
  • 6-7 pistachios (sliced)
  • 6-7 cashews (chopped)

Instructions

  • First, start by peeling and chopping a pumpkin into roughly 1-inch cubes and filling two cups.
  • Then, place the pumpkin cubes in a pressure cooker with 3 cups of water. Cook for 2 whistles.
  • Once the pressure releases naturally, check if the pumpkin has cooked properly. Then, strain the pumpkin followed by mashing it with a fork.
  • Now, take a thick-bottomed pan and add a teaspoon of ghee. Add the roughly chopped cashew nuts and fry them until golden brown. Then, keep them aside.
  • In the same pan, add 3 cups of milk (you can also use almond milk) and bring it to a boil.
  • Once the milk comes to a boil, stir it continuously on low flame so that it doesn’t catch the base.
  • After stirring the milk for 4-5 minutes, add the mashed pumpkin. Combine it well with the milk and mash the lumps, if there are any. 
  • Then, add 4 tablespoons of your regular sugar to the pan and keep stirring it while allowing the sugar to dissolve. This process usually takes about 1-2 minutes.
  • Add cardamom powder and half of the sliced almonds, pistachios, and cashews.
  • Give it a stir and turn off the flame. Garnish it with the remaining sliced dry fruits.
  • Serve your pumpkin kheer warm and enjoy!
