Ingredients

  • 500 Gms Cauliflower Florets
  • 2 Tbsp Sesame Oil
  • 250 Gms Boneless Chicken Breast
  • 2 Egg Whites
  • Vegetables Of Your Choice
  • 5 Garlic Cloves If Using Small Ones
  • A Pinch Of Ajinomoto
  • 2 Tbsp Soy Sauce
  • Salt As Per Taste
  • 1 Small Onion

Instructions

Step 1
Cut the head of the cauliflower into florets and boil them for 1 minute. Drain and let them cool down. Then blend to make a coarse texture for the rice. Keep aside.
Step 2
Chop the vegetables of your choice along with the onion but keep them separate.
Step 3
Cut the chicken breast into pieces for the fried rice (I prefer them lengthwise).
Step 4
Mince the garlic into small pieces.
Step 5
Separate the egg yolks from the egg if you want to make this a weight loss recipe and keep the egg white.
Step 6
Heat the oil in a skillet or wok and lightly fry the chicken pieces for 5 minutes.
Step 7
Remove from the pan and now saute the garlic.
Step 8
Add in onions and saute until translucent.
Step 9
Add the vegetables and cook until they are soft but not too soft as we want to retain the bite texture.
Step 10
Sprinkle a pinch of Ajinomoto.
Step 11
Add the cauliflower and toss for 2-3 minutes.
Step 12
Fold in the chicken pieces and mix it all and cook for 2 minutes with salt as per taste.
Step 13
Serve with a sprinkling of sesame seeds or garnishing of your choice.
